Lahori Chicken

Ingredients
- 1 chicken cut & washed
- ½ tin tomato puree
- 1 tablespoon chilli garlic paste
- 2 teaspoons salt
- 1 ½ teaspoon chilli powder
- ¼ teaspoon turmeric
- 1 teaspoon dhana (coriander powder)
- 1 teaspoon jeeru (cumin)
- 2 tablespoons lemon juice
Method
- Marinate the chicken with the above ingredients for at least 1 hour.
- Cook the chicken in ghee (clarified butter) until cooked through.
- Once cooked, transfer the chicken to an oven tray or Pyrex dish.
Sauce
- 3 tablespoons olive oil
- A small knob of butter
- 1 tablespoon crushed garlic
- 1 tablespoon red chili powder
- 1 tablespoon crushed red chili
- 1 tablespoon lemon juice
- Braise this mixture until the garlic cooks slightly.
- Pour the sauce over the chicken.
- Add sliced tomato on top of the chicken.
- Grill the chicken for 10 minutes or until it seals and browns (cooking time may vary depending on your oven).
Info & Tips: This dish is perfect to serve with a side of chips and fresh Rogni Naan or Parathas.
Additional Tips:
- This recipe works wonderfully with baby chickens, which cook quicker and become very tender.
- For extra flavor, try adding a little bit of garam masala to the sauce.
- If you prefer a richer taste, substitute the olive oil with more ghee in the sauce preparation.
