Succulent Saucy Chicken

Ingredients

  • 1 chicken cut
  • 1 teaspoon fine red chillies
  • ½ teaspoon lemon pepper
  • 1 full tablespoon ginger garlic masala
  • Juice of 1 lemon
  • 1 tablespoon white vinegar
  • ¼ cup oil
  • 1 teaspoon Aromat (South African spice)
  • 1 teaspoon chicken spice

Method

  1. Marinate chicken with the above spices for a few hours.
  2. Cook on low heat in its own juices. Avoid adding water unless necessary.
  3. Once the chicken is cooked and tender, add sauce and leave to simmer.

Sauce

  • 3 tablespoons mayonnaise
  • 3 tablespoons bushveld braai (bbq) sauce (Nandos)
  • 3 tablespoons bbq sauce
  • 1 tablespoon tomato puree
  • 1 tablespoon tomato sauce
  • Juice of ½ lemon
  • Salt to taste
  • Blob of butter
  1. Boil all ingredients for the sauce together, and add it to the chicken.
  2. Let the chicken simmer with the sauce until fully infused with flavor.
  3. Thin slices of green pepper can be added when the chicken is almost done for added flavor.
Info & Tips: You can also add a dash of cream for a richer, creamier sauce.
Additional Tips:
  • For a smokier taste, use smoked BBQ sauce instead of regular BBQ sauce.
  • If you want extra heat, add some chopped fresh chilies to the sauce.
  • Pair the chicken with buttery mashed potatoes or a side salad for a complete meal.
