Succulent Saucy Chicken

Ingredients
- 1 chicken cut
- 1 teaspoon fine red chillies
- ½ teaspoon lemon pepper
- 1 full tablespoon ginger garlic masala
- Juice of 1 lemon
- 1 tablespoon white vinegar
- ¼ cup oil
- 1 teaspoon Aromat (South African spice)
- 1 teaspoon chicken spice
Method
- Marinate chicken with the above spices for a few hours.
- Cook on low heat in its own juices. Avoid adding water unless necessary.
- Once the chicken is cooked and tender, add sauce and leave to simmer.
Sauce
- 3 tablespoons mayonnaise
- 3 tablespoons bushveld braai (bbq) sauce (Nandos)
- 3 tablespoons bbq sauce
- 1 tablespoon tomato puree
- 1 tablespoon tomato sauce
- Juice of ½ lemon
- Salt to taste
- Blob of butter
- Boil all ingredients for the sauce together, and add it to the chicken.
- Let the chicken simmer with the sauce until fully infused with flavor.
- Thin slices of green pepper can be added when the chicken is almost done for added flavor.
Info & Tips: You can also add a dash of cream for a richer, creamier sauce.
Additional Tips:
- For a smokier taste, use smoked BBQ sauce instead of regular BBQ sauce.
- If you want extra heat, add some chopped fresh chilies to the sauce.
- Pair the chicken with buttery mashed potatoes or a side salad for a complete meal.
